Healthy Instant Pot Beef Stew (Whole30) September 14, 2017
I finally have my Instant Pot Beef Stew recipe up for you today! I had an overwhelming amount of requests for this recipe, so I’m happy to give you a place to refer back to when you want to make it yourself! This recipe is able to be Whole30 compliant, and I’ve added instructions on how to do so. One tip I have is that finding beef broth can be VERY difficult while on Whole30. Sometimes it’s easier to just use compliant vegetable broth, although the taste isn’t nearly the same. I did find some compliant beef broth from Bare Bones Broth here, although it comes at a price! But if you aren’t worried about Whole 30, then I just use organic beef broth!

Healthy Instant Pot Beef Stew (Whole 30)
INGREDIENTS:
– 1lb lean beef stew meat
– 1/2 cup arrowroot powder (or flour, or other starch depending on your preference)
– 1 TBSP dried thyme
– 1 TBSP ghee (Whole30) or butter
– salt
– pepper
– 1 box beef broth (CHECK INGREDIENTS if Paleo or Whole 30. You might need to use vegetable broth)
– 1 cup water
– 4 large carrots, peeled and chopped into chunks
– 3-4 medium golden potatoes, unpeeled and chopped into chunks
– 1/2 large onion
– peas are optional! I don’t add them if paleo/Whole30
DIRECTIONS:
In a separate bowl, coat the beef with the arrowroot powder, thyme, salt and pepper.
Set the Instant Pot to “Saute” and add the ghee. Let it melt for a few seconds, then add the coated beef to the pan.
Let the meat brown on all sides, but not cook through. This will take a few minutes, and keep stirring to move it around. Once the beef is browned, add in your beef broth and water.
Using a spoon, stir the beef and gently scrape up the remnants stuck to the bottom of the pot. Then add in your onions, carrots, potatoes, dash of Worcestershire sauce (optional), and salt to taste. Add a little more water if needed, depending on how much liquid you want in your stew.
Place the top on the instant pot, and lock it into place. Make sure the release is closed! Then set the Instant Pot to “Meat/Stew” for 35 minutes.
When finished, allow Instant Pot to slow release (this might take some time), or CAREFULLY quick release.

- If Whole 30, CHECK INGREDIENTS. Beef broth is difficult to find without sugar!
